Qué Bonito Cacareaba 2011 has been a ripe harvest in case of white vintage.  In order to balance the different levels of maturity that usually presents the vineyards the winery adjusted the dates of harvest of each plot waiting they reached their peak of ripeness.  Each variety had its own harvest date.  Also, for a greater freshness, harvest took place during the morning so that temperatures were cooler.

The grapes were cold macerated for 48 hours and then the free-run juice was run off into 225L new French oak barrels for its alcoholic fermentation and ageing period.  Fermentation in the various barrels lasted an average of 21 days and took place very slowly at controlled temperatures of between 12ºC and 17ºC.  Afterwards the wine rested on its fine lees, with a weekly batonnage, until June 2011.  Fermentation done in oat vats and 100% New French Oak is used for barrels.  “Crianza” barrel ageing is taken for 8 months.

Que Bonito Cacareaba 2011 features a bright yellow color, more alive than ever.

In the nose is a fine and elegant wine. With citrus aromas and notes of just cut grass, and also with stone fruits touches (apricot, plum). The contribution of oak, although it is longer than in other vintages, promises a good integration.

The palate is fresh with a good skeleton. A great balance between ripeness, acidity and freshness has been got making the harvest on time. Long life.
